EDDY'S CRANBERRY SALAD | |
1 lb. cranberries Zest of 2 oranges 1 can crushed pineapple 1 (6 oz.) pkg. cherry Jello 1 1/2 c. sugar 1/2 c. chopped pecans Grind cranberries in blender. Make Jello using 1/2 less water than package calls for. Add sugar to Jello and dissolve. Add cranberries, orange zest, pineapple and nuts. Mix well and refrigerate. OPTIONAL: Make in ring mold and fill with chicken salad. Eddy Dalton is the wife of a former governor of Virginia. She assembled a cookbook as a fundraiser. |
