EDDY'S CRANBERRY SALAD 
1 lb. cranberries
Zest of 2 oranges
1 can crushed pineapple
1 (6 oz.) pkg. cherry Jello
1 1/2 c. sugar
1/2 c. chopped pecans

Grind cranberries in blender. Make Jello using 1/2 less water than package calls for. Add sugar to Jello and dissolve. Add cranberries, orange zest, pineapple and nuts. Mix well and refrigerate. OPTIONAL: Make in ring mold and fill with chicken salad.

This cranberry salad was delicious and reminded me of the cranberry/orange salad my mother-in-law made at holidays. To clarify, be sure to include the juice w/ the pineapple. I used chopped walnuts, and they tasted great in this. I may experiment and try reducing the amount of sugar...
