HOMEMADE TOMATO SAUCE 
1/2 c. butter
4 lg. ripe tomatoes, peeled, seeded, chopped
1 med. yellow onion, chopped
1 clove garlic, mashed
1 rib celery, finely chopped
1 tsp. fresh basil leaves or 1/2 tsp. dried
1 tsp. fresh oregano or 1/2 tsp. dried
Pinch of thyme
1 tbsp. sugar
1/4 tsp. orange peel, grated

Melt the butter over low heat. Add remaining ingredients. Cook over medium heat, stirring frequently, until thick. Makes about 1 to 1 1/2 cups tomato sauce.
