SAUCY CHICKEN 
1 sm. onion, sliced and separated
2 tbsp. butter or marg.
2 c. V8 juice
3 tbsp. parsley
2 tbsp. cornstarch
1/2 tsp. marjoram
1/2 tsp. basil
4 chicken breasts or (6 thighs skinned)
2 tbsp. Parmesan cheese

Heat oven to 350 degrees. In saucepan cook onion in butter until onion is tender but not brown. Combine one cup of V8 juice and cornstarch in shaker mix well.

Add V8 juice and cornstarch mixture. Remaining V8 juice, marjoram and basil to onion mixture. Cook and stir over medium heat until thick and bubbly. Cook and stir 1 to 2 minutes longer. Arrange chicken in baking dish, pour sauce over. Bake covered 50 minutes.

Remove cover, sprinkle with Parmesan and bake 10 minutes more.
