FRIED ZUCCHINI BREAD 
2 sm. zucchini
1 c. cornmeal
1/4 c. buttermilk

Wash and dice zucchini, cook until soft, leave 3/4 cup cooking liquid in pan. Combine cornmeal and buttermilk. Add zucchini and cooking liquid. Mix well. Fry in hot oil until golden brown.
