FRIED ZUCCHINI CAKES 
1/3 c. buttermilk baking mix
1/4 c. grated Parmesan cheese
1/2 tsp. each salt and pepper
2 lg. eggs, beaten lightly
2 c. coarsely grated zucchini (about 2 med. size zucchini)
2 tbsp. butter

Mix the baking mix, Parmesan cheese, salt and pepper in a bowl. Stir in eggs until mixture just becomes moist. Fold in zucchini. Melt butter in 10 inch skillet over moderate heat. Using 2 tablespoons batter for each, fry until brown on each side. 8 to 10 pancakes.
