FRIED ZUCCHINI CAKES 
1/3 c. buttermilk baking mix
1/4 c. grated Parmesan cheese
1/8 tsp. salt & pepper
2 lg. eggs. lightly beaten
2 c. grated zucchini
2 tbsp. butter

Mix baking mix, cheese, salt and pepper in a bowl. Stir in eggs until mixture just becomes moist. Fold in zucchini. Melt butter in a skillet over moderate heat. Use 2 tablespoons of batter for each pancake, fry 2 to 3 minutes on each side or until brown.
