EGG BEATERS SALAD SANDWICHES | |
2 (8 oz.) cartons EGG BEATERS 99% Real egg product 1/4 c. blender mayonnaise (recipe below) 1/4 c. chopped celery 1/4 c. chopped red pepper 2 tbsp. chopped scallions 12 slices low sodium white bread 6 lettuce leaves In large nonstick skillet, pour EGG BEATERS. Cover tightly; cook over very low heat 10 minutes or just until set. Remove from heat; let stand, covered, for 10 minutes. Remove from skillet; cool completely. Coarsely chop. In bowl, combine hard cooked EGG BEATERS, mayonnaise, celery, red pepper and scallions. Cover; chill until serving time. Divide and spread on 6 bread slices; top with lettuce and remaining bread. Serve immediately. NUTRITION INFORMATION per serving: 238 calories, 127 mg sodium, 0 mg cholesterol, 8 gm total fat, 1 gm. saturated fat. |
