TURKEY MEAT LOAF 
1 lb. ground turkey, defrosted if necessary
1 egg
1/2 c. seasoned bread crumbs
1/4 c. cold water
1 tbsp. dried onions
1 tbsp. green peppers, chopped
1/8 tsp. pepper
2 tbsp. catsup
1 tsp. prepared horseradish
1/2 tsp. prepared mustard

Preheat oven to 350 degrees. Combine all ingredients; place in lightly greased 4 1/2 x 8 1/2 x 2 5/8 inch loaf pan or shape in oval form and place into 1 quart lightly greased baking dish. Bake for 45 to 60 minutes or until meat is no longer pink in center of loaf.

Unmold onto platter; top with sliced tomatoes and garnish with parsley, if desired.

Serves four. (Each serving has 263 calories and 12 grams of fat.)
