UNCLE RON'S POTATO SOUP | |
46 oz. can clear chicken broth 6-8 med. potatoes 1 pkg. (3) leaks 1 1/4 c. half & half creamer In large saucepan pour chicken broth and peeled and diced potatoes. Clean and slice leaks, saute in butter, remove. Drain and add to broth and potatoes. Simmer, do not boil. Prior to serving, add 1 1/4 cups half & half and continue to simmer. Salt and pepper to taste. May also add celery, carrots, peas, etc., depending on preference. |
