GREEN TOMATO PIE 
1 1/4 c. sugar
1/4 tsp. salt
3 tbsp. flour
1/4 tsp. nutmeg
Pinch of cloves
Grated rind & juice of 1 lemon
2 tbsp. water
2 tbsp. butter for dotting

Wash and score 1 quart green tomatoes (do not peel), quarter tomatoes then slice thin. Cover with boiling water for 5 minutes and drain well. Place 1/2 of tomatoes in pie shell, sprinkle 1/2 of seasoning over tomatoes, dot with 1 tablespoon butter. Then add the rest of the tomatoes last half of seasoning and dot with butter and cover with pie crust. Bake at 450 degrees for 8 to 10 minutes then reduce heat to 375 degrees about 40 minutes.
