GREEN TOMATO PIE 
1 1/4 c. sugar
1/2 tsp. cinnamon
6 med. green tomatoes
3 tbsp. lemon juice
1/4 c. plus 2 tbsp. flour
1/2 tsp. nutmeg
1 tsp. grated lemon peel
1 tbsp. butter

Mix sugar, flour, cinnamon and nutmeg in medium bowl. Peel and cut tomatoes in pieces. Add tomatoes, lemon peel and juice to dry ingredients. Turn into a pie pan with a crust. Dot with butter. Cover with a top crust. Cover edge with aluminum foil to keep it from browning too much. Remove foil last 15 minutes of baking. Bake 35 to 45 minutes. Serve warm. To peel green tomatoes, put in boiling water for 2 minutes, then in cold water; peel. This makes a 9 inch pie.
