HAM FRITTATA 
2 c. frozen potatoes O'Brien
1 tbsp. butter
4 eggs
2 tbsp. water
1/8 tsp. salt
1 c. cubed cooked ham
1/4 c. shredded cheddar or American cheese

Combine potatoes and butter in 8 inch round microwave safe baking dish. Cover with plastic wrap.

Microwave in high 5-6 minutes or until heated through, stirring once. Beat together eggs and water. Stir in salt and ham. Add to potatoes; mix lightly. Cover.

Microwave on high 3 to 3 1/2 minutes or until edges are set. Move cooked portion to center. Cover. Then microwave on high 1 to 1 1/2 minutes or until center is just about set. Sprinkle with cheese; let stand a few minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
