SPANAKORIZO (SPINACH WITH RICE) 
1 lb. spinach
2 med. onions, chopped fine
1/3 c. rice
1/4 c. olive oil
Juice of one lemon
4 tbsp. tomato sauce

Saute onions in oil until golden. Add tomato sauce, spinach, salt and pepper to taste, lemon juice and one cup of water. Bring to boil. Add rice and stir. Cover and allow to simmer until rice is cooked.
