HOT BACON & SPINACH SALAD 
1 pkg. fresh spinach
1 sm. pkg. bacon
1/2 c. sugar
1/2 tsp. salt
1 tbsp. cornstarch
1/4 c. vinegar
1 c. water
1 egg, beaten

Wash and drain spinach. Cook bacon until crispy (one minute per slice in the microwave on paper towels makes it easy and crispy). Mix sugar, salt, cornstarch, vinegar, water and egg in small saucepan. Heat slowly while whipping. Dressing is done when thick and light yellow, about 10 to 15 minutes. If egg white separates, strain the dressing. Serve spinach and bacon salad mixed, with hot dressing on the side (I like to put it in a gravy boat.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
