SWEET POTATO CAKE 
4 eggs
1 1/4 c. Wesson oil
2 c. sugar
2 c. plain flour
2 tsp. baking soda
2 tsp. dry ginger
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. cloves (optional)
1 tsp. salt
3 c. grated sweet potatoes
1 c. nuts, chopped (optional)

Beat oil, sugar, eggs. Add all dry ingredients. Beat at medium speed, stir in potatoes and nuts. Bake at 350 degrees 25 to 30 minutes until it springs back.

CREAM CHEESE FROSTING:

1 stick butter
8 oz. cream cheese
1 tsp. vanilla
1 c. nuts
1 box confectioners' sugar

Cream butter, cream cheese and vanilla. Add sugar, beat until creamy. Stir in nuts.
