SWEET POTATO CAKE | |
3 c. sifted flour 2 c. sugar 1 tsp. cinnamon 1 tsp. nutmeg 2 tsp. vanilla 1 1/2 c. Crisco oil 2 c. grated sweet potatoes (can substitute carrots) 1 sm. can crushed pineapple with juice 3 eggs 1 c. chopped nuts Mix flour, sugar, cinnamon, and nutmeg in large bowl. Add oil, vanilla, sweet potatoes, pineapple and juice, nuts, and eggs; mix well. Bake in three 9 inch greased and floured cake pans at 350 degrees for 30-40 minutes or until a toothpick inserted in center comes out clean. Cool on wire racks. Frost with Cream Cheese Frosting. Cream Cheese Frosting: 1 stick butter, 8 ounce package cream cheese, 1 cup chopped nuts, 1 box powdered sugar (sifted), and 1 teaspoon vanilla. Cream butter and cream cheese until smooth. Add sugar and vanilla and beat well. Stir in nuts by hand and frost cake. |
