SWEET POTATO CAKE | |
1 1/2 c. sugar 1/2 c. oil 2 eggs 1/3 c. water 1 3/4 c. all purpose flour 1 1/2 tsp. ground cinnamon 1 tsp. ground nutmeg 1 tsp. baking soda 1/2 tsp. salt 1 c. mashed cooked sweet potatoes 1/2 c. chopped nuts 1/2 c. raisins Combine sugar, oil, eggs and water; beat at medium speed until just combined. Combine next 5 ingredients; add to egg mixture; mix just until moistened. Stir in sweet potatoes, nuts, raisins. Spoon batter into 2 greased, floured 1 pound coffee cans. Bake at 350 degrees for 1 hour or until a wooden toothpick comes out clean. Cool 10 minutes in cans, remove to complete cooling. You can also use 4 small peanut cans. |
