SWEET POTATO CAKE | |
3 c. all-purpose flour 2 c. sugar 2 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 2 tsp. ground cinnamon 1 c. vegetable oil 1 (15 1/4 oz.) can crushed pineapple, undrained 2 tsp. vanilla 3 eggs 2 c. peeled, grated raw sweet potatoes 1 c. chopped pecans Combine dry ingredients. Add oil, pineapple and vanilla. Mix until well blended. Add eggs, one at a time, beating well after each. Stir in sweet potatoes and pecans. Pour into greased and floured 10" tube pan and bake at 350 degrees for 1 hour and 15 minutes. |
