3 c. all-purpose flour
2 c. sugar
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
2 tsp. ground cinnamon
2 c. sweet potatoes, grated
1 c. vegetable oil
1 (15 1/4 oz.) can crushed pineapple (undrained)
2 tsp. vanilla
3 eggs
1 c. nuts, chopped

Combine dry ingredients. Add oil, pineapple and vanilla, and mix well. Add eggs, one at a time, beating well after each. Stir in sweet potatoes and nuts. Pour into greased and floured, 10-inch tube pan.

Bake at 350 degrees for 1 hour and 1 minutes.
