CRANBERRY UPSIDE DOWN CAKE 
1 1/3 c. plus 1 1/2 c. sugar
4 c. fresh cranberries
5 egg yolks
3/4 c. water
1/2 c. oil
2 tsp. vanilla
2 tsp. grated lemon rind
2 c. flour
1 1/4 tsp. baking powder
1 tbsp. salt
7 egg whites
1/2 tsp. cream of tartar

Grease two 8-inch square pans. Sprinkle each with 1/3 cup sugar. Place 2 cups cranberries in each. Sprinkle another 1/3 cup sugar over each and cover with foil. Bake in a preheated 325 degree oven for 30 minutes. Remove, uncover, and cool.

Mix the egg yolks with remaining 1 1/2 cup sugar. Beat in water, oil, vanilla, and lemon rind. Mix well. Combine flour with baking powder and salt. Add to egg yolk mixture and beat until smooth. Beat whites with cream of tartar until soft peaks form. Fold into batter. Spoon batter into pans and bake in a preheated 350 degree oven for 35 to 40 minutes (or 25 to 30 minutes at 300 degrees in convection oven). Cool 5 minutes, invert, and stack one on top of the other.
