1 pkg. lemon jello
1 c. boiling water
1 c. finely diced beets
3/4 c. finely diced celery
3/4 c. beet juice
1/2 tsp. salt
2 tbsp. lemon juice
1 tbsp. grated horseradish
2 tsp. grated onion

Let jello partially set. Fold in other ingredients. Let set. Serve with Cool Whip or salad dressing.
