PUMPKIN CAKE 
2 c. flour
2 c. sugar
1 1/2 c. Wesson oil
4 eggs
1 can pumpkin (1 lb. can)
2 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt

Sift all dry ingredients together. Add eggs, pumpkin, oil and hand mix. Bake in a regular size sheet cake pan (greased) at 350 degrees for 40 to 45 minutes.

Cool cake completely before icing.

ICING:

1 (1 lb.) box powdered sugar
1 (8 oz.) pkg. cream cheese
1 stick butter
1 c. chopped pecans
1 tsp. vanilla

Have the butter and cream cheese at room temperature. Mix all ingredients with hand mix until smooth.
