PUMPKIN CAKE (NIBBLER'S
DOWNFALL)
 
2 c. sugar
1 1/4 c. oil
4 eggs
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1 can (2 c.) pumpkin

ICING:

2 (3 oz.) cream cheese
1/2 stick butter
1/2 to 1 tbsp. milk
3/4 to 1 box confectioners' sugar
1 tsp. vanilla

Mix sugar, oil, add eggs, flour, baking soda, cinnamon, pumpkin. Bake in 2 square pans, greased, for 45 minutes at 350 degrees. Cool cake, mix icing ingredients, ice cake. Keep cake refrigerated.
