DUO VEGETABLE AND MEAT BAKE 
1 lb. lean ground beef
1/2 c. reg. wheat germ
1 egg
1/2 c milk
1/4 c. catsup
1 1/2 tsp. salt
1/4 tsp. pepper
3 med. acorn squash
2 tbsp. butter, melted
1 (10 oz.) pkg. frozen broccoli, partially thawed
1/2 c. dairy sour cream
Paprika

Combine meat, wheat germ, egg, milk, catsup, 1 teaspoon salt and pepper, mix well. Shape into 12 meatballs. Brown meatballs lightly in large skillet.

Cut squash in half lengthwise and remove seeds. Place cut side down in pan of water 1 inch deep. Bake at 375 degrees for 15 minutes. Remove from oven; pour off water. Brush squash with butter.

Divide broccoli and place in squash cavities. Sprinkle with 1/2 teaspoon salt. Top each with 2 meatballs. Bake at 375 degrees for 40-45 minutes, until vegetables are tender. Remove from oven. Top with sour cream. Bake 5 minutes longer. Sprinkle with paprika. Makes 6 servings.
