SCHALAMAR SOUR ORANGE PIE | |
1 c. granulated sugar 1/4 c. cornstarch 1/4 tsp. salt 1 3/4 c. boiling water 3 egg yolks, slightly beaten, reserve whites 2 tbsp. butter 1/4 tsp. vanilla 1 tsp. grated orange rind 1/3 c. strained sour orange juice Combine sugar, cornstarch and salt in top of double boiler. Gradually stir in boiling water. Cook and stir constantly until thick and smooth. Cover and cook 8 minutes. Stir in slightly beaten egg yolks. Return to cook and stir for 2 minutes. Remove and add butter, vanilla and grated orange rind; slowly stir in orange juice. Cool to lukewarm. Turn into baked pie shell. Beat egg whites until stiff (with a pinch of cream of tartar) add 1/4 cup sugar. Spread meringue over pie, sealing at crust edge. Bake at 350 degrees until golden, 10 minutes. Cool on wire rack. |
