SPINACH LASAGNA | |
2 jars spaghetti sauce or your favorite recipe 1 1/2 lbs. ricotta cheese 3/4 lbs. Italian sausage 1 1/2 c. shredded Mozzarella cheese 1 1/2 c. grated Parmesan cheese 1 egg, beaten 6 oz. cooked, chopped spinach, squeeze out moisture 1 tsp. sugar 1/4 tsp. nutmeg Steam sausage 15 minutes, and cut into small pieces. Mix ricotta cheese, spinach, egg and spices until smooth. Pour 1/2 cup sauce in bottom of baking pan and cover with layer of cooked lasagna noodles, a layer of ricotta, Mozzarella and pieces of sausage. Repeat until all ingredients are used. Top layer should be sauce and grated cheese. Bake at 350 degrees for 35-40 minutes. Cool 5-10 minutes before cutting. |
