SPANISH RICE 
1 c. rice
1 can Rotel tomatoes
1 can stewed tomatoes, drained & crushed
2 c. water
1 onion, diced
2 tbsp. cumin
2 tbsp. oil

Saute the rice in the oil until it's brown. Add the other ingredients and simmer until the rice is soft and the liquid has evaporated.
