SPANISH RICE CASSEROLE 
1 1/2 lbs. ground beef
2 sm. zucchini squash, sliced
1 green pepper, chopped
1 sm. onion, chopped
10 oz. can cream of mushroom soup
10 oz. can cream of chicken soup
10 oz. can stewed tomatoes with chilies
2 c. uncooked instant type rice
1/4 tsp. each salt, pepper, garlic powder, oregano, cumin
Grated Cheddar cheese (optional)

Cook ground beef until brown; drain off fat. Add zucchini, onions and green pepper; cook until wilted. Combine with remaining ingredients and place in large baking dish. Bake 350 degree oven for 30 minutes. Top with grated cheese and return to oven until cheese is melted (about 5 minutes). Serves 8-10.
