SPANISH RICE 
1 c. raw rice
1 onion, chopped
1 sm. jar green olives; optional
1/2 c. chopped green pepper
1 c. tomatoes, plus 1 c. water or 1 can stewed tomatoes, use juice instead of water
1 c. grated cheddar or American cheese
1/2 c. melted butter
Salt and pepper, to taste

Mix above ingredients together well. Pour into baking dish and bake at 350 degrees for 1 hour. Use Pam or spray to grease dish.
