SPANISH RICE 
1 c. uncooked rice
1/4 c. butter, butter or vegetable oil
1 med. onion, thinly sliced
1/2 med. green pepper, diced
2 c. stewed tomatoes with juice
2 tsp. salt
Dash pepper
1 c. water
Optional: 1 lb. browned beef or cooked chicken

Heat shortening in saucepan. Add onion, green pepper and rice. Cook and stir over high heat until lightly browned. Add tomatoes, water, salt and pepper. Add meat if desired. Mix well. Bring gently to a boil. Cover tightly, lower heat, simmer gently 30 minutes.
