COCONUT CUPCAKES 
4 eggs
1 3/4 c. sugar
1 c. flour
1 c. oil
1 c. coconut, thinly shredded
1 tsp. lemon

Beat the eggs with sugar. Add the oil, lemon and flour. Beat well. Fold in the coconut. Pour mixture into cupcake forms and bake at 350 degrees for 20 minutes.
