CHIEF'S HOT WINGS 
This recipe came from Chief's wing bar in Spartanburg, SC.

4 dozen chicken wings
soy sauce
red pepper
garlic powder
pick-a-pepper sauce
crystal wing sauce
Tabasco sauce
cooking oil

Wash and using poultry scissors cut into the joint and keep the larger, top side of wing. Place all wings in large bowl and sprinkle all over with soy sauce, garlic powder, and Pick-a-Pepper sauce. Toss to coat, cover bowl with foil and marinate overnight in refrigerator. Toss several times while marinating.

The next day when ready to cook, fry wings and fry in hot oil turning until browned on all sides. Drain on paper towels. Using large Jelly roll pans covered in Parchment paper, line wings up in rows, not touching. Pour wing sauce over every wing, and turn to coat. Sprinkle with soy sauce, seasonings, soy sauce, and tobacco sauce.

Place in oven under broiler and crisp and brown on all sides. Remove from oven and drain on paper towels. Serve hot.
