SUMMER SNOWBALLS 
1 box vanilla wafers
1 sm. can crushed pineapple in juice
1/2 c. brown sugar
1/4 c. butter
3 tsp. cornstarch
Cool Whip or whipping cream
Coconut
Maraschino cherries

Combine pineapple in its juice, sugar, butter and cornstarch in a small saucepan. Cook over medium heat until mixture is thickened and clear. Cool.

Spread some pineapple mixture on a vanilla wafer. Add another wafer, spread with pineapple filling, and top with a third layer. As you fill wafers, refrigerate in a Freezer Mate large or another container.

When you have used up all the filling and wafers, spread each "Snowball" with whipped topping. Sprinkle with coconut and top with a cherry. Refrigerate before serving about an hour.
