BAKED APPLES 
4 Rome or Cortland apples
4 tsp. chopped walnuts
4 tsp. brown sugar
4 tsp. butter
1 tbsp. fresh lemon juice
Cinnamon

1. Core the apples almost to the bottom. Peel off an inch of skin around the top of each apple. Place apples around the edges of a 10 inch glass pie pan. Place a teaspoon of walnuts into the center of each apple, then press 1 teaspoon butter and 1 teaspoon brown sugar into opening of each apple. Sprinkle exposed apple flesh with lemon juice and cinnamon.

2. Invert a large glass bowl over the pie plate as a cover. Microwave on high for 7 minutes, or until apples are tender. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
