ZUCCHINI CAKE 
3 eggs
2 c. sugar
1 tsp. vanilla
2 c. shredded zucchini
1 tsp. salt
1 c. crushed pineapple, drained
1 c. nuts
1 c. oil
3 c. flour
1 tsp. baking powder
1 tsp. baking soda

Beat eggs, sugar, vanilla and oil until fluffy. Add zucchini, flour, baking powder, soda, and salt. Mix well. Stir in pineapple and nuts. Pour into greased and floured 9 x 13 inch pan. Bake at 325 degrees for 1 hour.
