ZUCCHINI SQUASH CAKE 
4 eggs
2 c. sugar
1 c. vegetable oil
2 c. flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 (8 1/4 oz.) can crushed pineapple, drained
1 c. chopped nuts
2 c. grated zucchini
2 tsp. vanilla

Beat eggs and sugar. Add oil, beat until blended. In separate bowl, mix flour, cinnamon, baking powder and soda. Add these dry ingredients to egg mixture. Beat two minutes. Stir in drained pineapple, nuts, vanilla and zucchini. Mix thoroughly. Grease and flour 10" tube pan. Bake at 350 degrees for 1 hour and 30 minutes.
