ZUCCHINI CASSEROLE | |
3 sm. zucchini, sliced 1 med. onion, sliced Fresh mushrooms, sliced 1 to 2 lbs. bulk Italian sausage Your favorite cheese topping, shredded 1 to 2 cans stewed tomatoes, drain a small amount off Seasoned salt and pepper Paprika Fry sausage in skillet until lightly browned. Drain in same skillet saute zucchini, onions, mushrooms until crisp and tender. Add tomatoes and sausage and simmer to cook off some juice. Place mixture in casserole dish. Cover with shredded cheese and bake until cheese is browned slightly in 350 to 375 degree oven. Season vegetables to your taste while sauting. |
