ZUCCHINI CASSEROLE 
4 med. zucchini
2 sm. onions
1/2 c. grated Italian cheese
1 clove garlic, chopped fine
2 eggs, beaten
1/2 lb. Italian sausage
1 c. crushed crackers
Parsley flakes

Take sausage out of casing and brown with onion. Let cool and drain off fat. Slice zucchini 1/2 inch thick. Cook in water until tender. Drain.

Mix crackers, cheese, garlic and parsley flakes with zucchini. Add sausage and eggs. Mix thoroughly. Bake 350 degrees 45 minutes in a 9x9 inch pan.
