VEGETABLE - SHRIMP QUICHE 
4 ready to bake buttermilk flaky biscuits
4 eggs
4 oz. Swiss cheese, shredded
2 1/2 c. parboiled cauliflower
4 oz. cooked, deveined shrimp
1 c. mushrooms, chopped
1/2 c. minced onion
Dash of salt and pepper

Preheat oven to 350 degrees. Roll each biscuit between 2 sheets of wax paper. Spray 10 inch pie plate with nonstick cooking spray. Line pie plate with biscuit circles. Press together to seal, forming a crust. Bake for 5 minutes. Let cool. In medium mixing bowl, beat eggs; stir in cheese. Add cauliflower, shrimp, mushrooms, onion, salt, and pepper and mix well. Pour into prepared crust. Bake until set, about 50 to 60 minutes. Makes 4 servings.

Per Serving: 333 calories. 25 grams protein. 515 milligrams sodium. 343 milligrams cholesterol.
