RICOTTA EGG BISCUITS 
2 sticks butter, melted
2 eggs
2 c. sugar
4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 lb. ricotta cheese
1 tsp. vanilla
3/4 to 1 c. additional flour as needed

Melt 2 sticks butter. Set aside to cool. Beat 2 eggs by hand in large bowl then add 2 cups sugar. In smaller bowl mix flour, baking powder and baking soda. Set aside.

Mix cooled butter with egg mixture. Add ricotta and vanilla. Add flour mixture gradually with spoon and then by hand as mixture thickens. Add 3/4 to 1 cup extra flour as needed so that dough doesn't stick to your hands. Place on ungreased cookie sheet with teaspoon or roll in balls and place. Bake at 350 degrees for 15 minutes. Remove when bottoms are brown.
