HASH BROWN CASSEROLE 
2 lbs. frozen hash brown potatoes, thawed
1/2 c. melted butter
1 tsp. salt
1/2 tsp. pepper
1 can cream of chicken soup
1/2 c. onion, chopped
2 c. grated cheddar cheese
Crushed cornflakes

Mix all ingredients together and put in large greased baking dish. Bake 30 minutes at 350 degrees. Remove from oven and top with crushed cornflakes. Bake 30 more minutes at 350 degrees. This can also make 2 small casseroles.
