SWEDISH RYE BREAD | |
2 pkgs. active dry yeast 1/4 c. warm water 1/2 tsp. sugar 2 tbsp. butter 3 c. milk 4 tbsp. brown sugar 3 tbsp. granulated sugar 1 1/2 tsp. salt 2/3 c. molasses 2/3 tsp. baking soda 3 c. rye flour 6 c. white flour Sprinkle yeast over water and 1/2 teaspoon sugar mixture. Melt butter in 3 cups milk. Cool. Place in large mixing bowl and add sugars and salt. Add baking soda to molasses. Add to milk mixture. Add the yeast and mix. Add rye flour and enough white flour to make stiff dough. Knead, using more flour as necessary. Set aside to rise until double in a greased bowl. Punch down and let rise again. Form into three loaves and one pan of biscuits. Let rise until double in size and bake at 375 degrees for 10 minutes and then at 350 degrees until done. |
