SCALLOPED OYSTERS 
1/2 c. fresh bread crumbs
1 c. cracker crumbs
Optional seasonings: Lightly sauteed onions, bell peppers and or celery, chopped parsley or cilantro; chopped Ortega chilies
2 c. light cream (evaporated milk - even skimmed - good!)
1/4 c. melted butter
1 pt. oysters
Salt and pepper to taste

Combine crumbs and butter. In a greased shallow baking dish or loaf pan, spread about 1/3 of the crumb mixture. Cover with a layer of half of the oysters. Sprinkle with seasonings of your choice and 2 tablespoons of oyster liquor. Add 1 cup of oysters, seasonings, liquor and cream. Cover with remaining 1/3 crumbs. Bake at 450 degrees for 20 minutes, until lightly browned on top. Unbelievably rich and good.
