SWEET POTATO AND APPLE CASSEROLE 
1 lb. sweet potatoes
2 lg. firm and tart apples, scrub well
3 tbsp. flour
3 tbsp. brown sugar
1/4 tsp. cinnamon
1/4 tsp. salt
3 tbsp. butter
3/4 c. orange juice

Wash and peel potatoes. Slice in 1/4 inch slices. Core and slice unpeeled apples. Mix flour, sugar, cinnamon, and salt. Sprinkle this mixture over potatoes and apples; toss lightly. Grease a 7 1/2 x 12 inch casserole with 1 tablespoons butter and arrange apple and potato slices alternately. Dot with 3 tablespoons butter and pour juice over mixture. Bake covered at 350 degrees for 40 minutes. Uncover and bake 10 minutes longer. Serves 4-6.
