QUICK AND EASY CHICKEN STIR-FRY 
2 tbsp. oil
3 boneless, skinless chicken breast halves
1 garlic clove, minced
1 c. each broccoli flowerets, red pepper strips and carrot slices
1/4 c. green onion
1/2 c. miracle whip
1 tbsp. soy sauce
1/2 tsp. ground ginger

Heat oil in skillet over high heat. Cut chicken into strips. Add to skillet with garlic. Stir-fry 3 minutes. Add vegetables. Stir-fry for 3 minutes. Reduce heat to medium. Stir in remaining ingredients. Simmer for 1 minute. Serve over rice.

Serves 4.
