ENCHILADA CASSEROLE 
Have left over chili? Make enchiladas.

Dip corn tortillas in hot grease and drain on paper towels. Chop large onion and cut finger size strips of Velveeta cheese. Start with chili, then tortilla, onion, cheese, and chili and layer these items in casserole dish making sure chili is last item on top and covers well all tortillas.

Bake at 350 degrees uncovered until onion is done. (May saute onion before adding it to decrease baking time in this case, make sure casserole is heated until it bubbles.) Casserole baking may be done in microwave with dish covered. (Do not heat grease in microwave.) Also casserole may be cooked in crock pot. Is great warmed over and also freezes well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
