CHICKEN ENCHILADA CASSEROLE 
1 bag taco chips
1 1/2 c. chicken broth
1 can cream of chicken soup
Chopped onion and jalapenos, to taste
1 pkg. shredded cheddar cheese
1 boiled chicken, deboned
1 can cream of mushroom soup
1 can chopped green chilies

Place taco chips in bottom of casserole pan. Spread bite sized pieces of boiled chicken over top. Mix broth, soups, chilies, onions, and jalapenos. Pour the mixture over chicken and chips. Cover with plastic for microwave or foil for oven. Place in microwave for 20 minutes on medium high (or in oven at 350 degrees for 30 minutes covered). Then sprinkle a generous amount of shredded cheddar cheese on top and cook until cheese is melted. Serve with sour cream and black olives. This recipe can be frozen and served later.

Since microwave ovens vary in power, you may need to adjust your cooking time.
