MEXICAN CHICKEN CASSEROLE 
1 pkg. tortillas
1 pkg. dry taco seasoning
1 c. sour cream
2 tbsp. catsup
1 can mild Jalapeno relish
1/2 c. olives, chopped
2 c. cooked chicken
1 c. shredded Cheddar cheese
1 tsp. vinegar
2 tsp. brown sugar
1/2 c. chopped onion

In skillet, mix chicken, taco seasoning, catsup and relish. Add vinegar, brown sugar, and onion. Bring to boil and reduce heat. Simmer about 20 minutes. Make layers in casserole dish. Use tortilla, sauce mixture, and cheese. Top and seal with sour cream. Cover. Bake at 350 degrees for 30 minutes. Garnish with olives.
