MEXICAN CHICKEN CASSEROLE 
1 whole chicken or 4 chicken breasts
1 lg. pkg. Dorito brand nacho chips
1 c. diced onion
1 c. diced bell pepper
1 c. chicken broth (that chicken was cooked in)
1 1/2 or 2 c. shredded Cheddar cheese
1 can Ro-tel tomatoes with green chilies
2 cans cream of chicken soup

(Remove chicken from bone.) Place chips in bottom of casserole dish. Pour 1/2 cup chicken broth over chips. Layer with chicken, then onions, then bell peppers, then cheese, continue to layer. Sprinkle 1 tablespoon chili pepper and garlic salt over this. Add 2 cans of cream of chicken soup and tomatoes. Place in oven, 350 degrees, and bake for 30 minutes.
