PEPPER SOUFFLE 
2 sm. cans Ortega pepper, whole diced
1/2 lb. grated Jack cheese
3 beaten eggs
3 c. milk
1 c. Bisquick
1/2 tsp. salt

Slice peppers in half and place in buttered casserole. Mix eggs, salt and Bisquick with a little milk to form thin batter, add remaining milk. Pour over peppers. Sprinkle grated cheese over mixture. Bake 20 to 45 minutes in 350 degree oven.
